Refresh your spring recipes with these super delicious salmon cakes! With a few simple ingredients, you’ll have a beautiful versatile gourmet salmon dish. I served mine with baked yams, but they could be paired with almost anything.
Ingredients :
This recipe makes 4 salmon cakes
4 ounces of salmon
1 teaspoon black pepper
1/2 teaspoon paprika
1 teaspoon garlic powder
A pinch of salt
1/2 teaspoon adobo
About 1 tablespoon chopped jalapeño (you can use more or less depending on your preference)
1/2 tablespoon basil
About 1/4 cup chopped bell peppers (you can use more or less depending on your preference)
About 1 tablespoon chopped red onions (you can use more or less depending on your preference)
1 teaspoon chopped garlic
1 cup of breadcrumbs
4 tablespoon of mayonnaise (I used vegan mayo)
Oil
Optional (1 Egg)
Directions:
First, prepare your salmon by cleaning and seasoning it and bake at 350 degrees Fahrenheit for about 17 minutes.
While the salmon is baking, prepare your veggies and saute in a pan for 4 minutes. ( I used cooking spray instead of oil for this.)
After the salmon has finished baking, place in a bowl and shred.
Next, add the veggies, mayo, and breadcrumbs to the shredded salmon and mix. ( If you desire to add an egg, do so during this step.)
Finally, shape your mixture into circular cakes and fry in a pan with oil until golden brown on each side.
And viòla, you’ve got beautiful delicious salmon cakes!

These salmon cakes were SO AMAZING! I was shocked by how delicious they were. The execution was a lot easier than expected, the most difficult part was waiting for the salmon to bake. The cakes are very versatile and could definitely be served on a bun, with a salad, with pasta, or with your favorite veggies. I would rate these a 10/10 and will definitely be making them again, enjoy!
