Cheesecake can be a daunting dessert to make, but once you practice, you’ll become an expert. You will be ready to start experimenting with different flavors and pairings. Brownie cheesecake is a popular creation because it combines two of the best desserts ever! Top it off with chocolate fudge and everyone will be begging you to make more!
Ingredients (via to Tasty.com)
- 1 box brownie mix, prepared according to package instructions
- 24 oz cream cheese
- ¾ cup sugar
- 3 eggs, beaten
- 2 teaspoons vanilla extract
- 1 lb semi-sweet chocolate chips*
- 2 cups heavy cream*
*Note: I altered the recipe’s amounts. I used 0.5 lbs semi-sweet chocolate chips and 1 cup of heavy cream.
First, preheat the oven to 350° and grease a cheesecake pan. Mix the brownie batter. I used the Ghiradelli Brownie mix. Pour into the baking dish. Bake for 20-25 mins and remove to cool. Set oven at 325°.
Then, make the cheesecake batter. Combine cream cheese, sugar, eggs, and vanilla extract. Pour over brownie base. Bake for 50 minutes until the batter is set but jiggly in the center.
Once the cheesecake has baked, remove to cool for 10 minutes. Put in the fridge overnight to set completely.
For the fudge, make a ganache mixture. Microwave heavy cream and pour over chocolate chips. Stir until chocolate is smooth and let cool for 10 mins. Pour fudge over cheesecake mixture. Let ganache set and remove cake from tin.
